The name Papa Nono honors the legacy of the father of José Antonio Salaverria SR and grandfather of Andrés Salaverria, who was known by the name “Papa Nono”. Coffee is a generational business in the Salaverria family which has always worked with a lot of passion and love in the cultivation of coffee. Papa Nono was part of the third generation of the coffee family, followed by José Antonio Salaverria Borja -fourth generation- who today works with his son Andrés -fifth generation-. Papa Nono has always instilled a principle of teamwork and this lot is a clear example of the result of the good work put in from the harvesting of the fruit at its optimum point, its cold fermentation process, to its export process. Just as we have fought for this lot, we will fight to have many more of equal or better quality in the future, following the legacy of our ancestors, always with the passion for coffee that has characterized us as a family.

  2. Its key descriptor in aroma and flavor is champagne.
  3. Other descriptors that complete its organoleptic profile are red currant and pineapple.
  4. It is an ideal coffee for espresso and filter extraction.
  5. It has an overall SCA scale score of 90.5 points.
  6. Its acidity is malic and complex, with a medium-high intensity.
  7. It has a medium-high intensity body and is silky to the touch.
  8. It is a coffee grown in the coffee geography of Dos Océanos, in the coffee growing region of El Salvador and in the coffee growing region of Apaneca – Ilamatepec.
  9. It is a coffee of the arabica species of the Bourbon Amarillo and Pacas varietal.
  10. It is a coffee that we have processed in natural with a combined fermentation, dried in the sun and in African beds in a sleeping bag.

"Passion for coffee".

  • Since I was a child I have had a passion for coffee growing. I like challenges and coffee growing presents strong challenges, but it is worthwhile to work and always try to innovate new things, I also like to work with the social and ecological components around coffee growing.
  • I am the fifth generation of coffee growers in my family, and I have been involved in coffee growing for 11 years.
  • For me the most critical points in the production process of our coffees are the planting, flowering, the winters, ripening and the harvesting season.
  • All the stages have an important degree of importance for the results of the coffees.
