This brewing process produces a light and clean cup because the filter retains the non-soluble solids during extraction.

How to do it?

Measure
For every 100 ml of water, add 6 grams of coffee. It is recommended not to exceed 500ml for a 6-cup Chemex.

Prepare
Place the filter over the top and moisten with hot water to clean flavors and possible impurities. Subsequently discard the water

Fill out
Place the ground coffee on top of the filter and level the coffee bed (no more than 5 cm high).

Infuse
For the pre-infusion, pour the water between 92-94ºC and let it rest for 30 seconds (this part is preferably done with twice the amount of water than the grammage of coffee). For the infusion, keep pouring water in a circular motion following a single direction (do not pour in one go, but divide the total amount in about 3-4 steps).

Serving
Remove the filter, stir the beverage to mix the extraction and enjoy the coffee.
