We arrived in mid-March, after a short flight from Nicaragua. Although it is the smallest country in the region, El Salvador stands out for the level of development and success in the production, processing and research of Flavour profiles for Green coffee. Here we work closely with two partners: <strong data-start=\"878\" data-end=\"888\">Alimsa<\/strong> and <strong data-start=\"891\" data-end=\"900\">Jasal<\/strong>.   <\/p>\n<h2 data-start=\"905\" data-end=\"980\">Farm Villa Espa\u00f1a: tradition and future from the hand of the Mena Brothers.<\/h2>\n<p data-start=\"982\" data-end=\"1343\">Our tour began in <strong data-start=\"1011\" data-end=\"1034\">Concepci\u00f3n de Ataco<\/strong>, at the Farm Villa Espa\u00f1a. There we were welcomed by the Mena Brothers -V\u00edctor, Alfredo and Jorge- representatives of the fifth generation of coffee growers in their family. Their work is focused on adapting both Cultivation and processing to current market needs, without losing the essence of tradition.  <\/p>\n<p data-start=\"1345\" data-end=\"1423\">The coffees of the Mena family are already well known among our roasters:<\/p>\n<ul data-start=\"1424\" data-end=\"1553\">\n<li data-start=\"1424\" data-end=\"1478\">\n<p data-start=\"1426\" data-end=\"1478\">Saturninus, within our Terras Range.<\/p>\n<\/li>\n<li data-start=\"1479\" data-end=\"1553\">\n<p data-start=\"1481\" data-end=\"1553\">Sulafat microlots, within our Constellations Range.<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"1555\" data-end=\"1768\">Each year, the cleanliness, sweetness and diversity of Villa Espa\u00f1a&#8217;s lots grow in quality. In this last Harvest, we produced<strong> 12 microlots, of which 10 exceeded 87 points in the SCA protocol.<\/strong> <\/p>\n<p data-start=\"1770\" data-end=\"2287\">Mutual trust, product consistency, and years of collaboration with the Mena family led us to take a step further: together with Jorge and Alfredo, we organized a farm visit with high school students from Ataco, as part of our <a href=\"https:\/\/mareterracoffee.com\/en\/young-coffee-legacy-project\/\">Young Coffee Legacy Project<\/a>. For over three hours, we toured the greenhouse and the wet mill, discussed varieties and processes, and cupped both natural and washed coffees  <strong>The talk opened a space for dialogue on professional opportunities in agriculture, logistics, economics, information technology and coffee-related services.<\/strong><\/p>\n<p data-start=\"2289\" data-end=\"2563\">This meeting was the beginning of a new stage: throughout the year the young people will have programmed activities in Villa Espa\u00f1a and in the benefits. We have been working with <strong data-start=\"2754\" data-end=\"2775\">Andr\u00e9s Salaverr\u00eda<\/strong> for more than five years, developing processing experiments, refining recipes and expanding volumes. <\/p>\n<p data-start=\"2865\" data-end=\"3075\">Cherry of this collaboration, two years ago Lyquidambar was born, a coffee of our Terras Range. This year we have reached a production of 19 tons, enough to fill a full container. <\/p>\n<p data-start=\"3077\" data-end=\"3286\">Another recent success is Dossokam, also from the Terras Range, which debuted last year and this year reached 15 tons of production, maintaining a stable Profile and with 87 SCA points.<\/p>\n<p data-start=\"3288\" data-end=\"3520\">The star that gives its name to Andr\u00e9s&#8217; coffees is Vega. In this Harvest we have prepared 14 microlots, all with scores above 87 points. Outstanding results that reinforce the value of this project.  <\/p>\n<p data-start=\"3522\" data-end=\"3830\">In addition to working on the current Harvest, together with Andr\u00e9s&#8217; team we have already begun to plan for the Harvest of 2024, incorporating a phase of industrialization of processes and a more exhaustive data control. This not only ensures delicious coffees, but also a more precise management of their Flavour profiles. <\/p>\n<p data-start=\"3832\" data-end=\"4061\">In total, this year we will have available more than 50,000 kg of coffees from El Salvador, elaborated according to our avant-garde recipes and with a diversity of Varieties and Profiles that will make any roaster in Europe fall in love.<\/p>\n<p data-start=\"3832\" data-end=\"4061\">\n<h2 data-start=\"4063\" data-end=\"4123\">Producer Roaster Forum: global meeting in El Salvador<\/h2>\n<p data-start=\"4125\" data-end=\"4591\">The trip concluded with our participation in the <strong data-start=\"4175\" data-end=\"4207\">Producer Roaster Forum (PRF)<\/strong>, an annual event that brings together coffee growers, roasters and industry professionals in a producing country.
