After the closure of the business, Joaqu\u00edn launched <strong>Afortunato<\/strong> as a &#8220;second part&#8221;: the same concept, but <strong>larger and more modern<\/strong>, with a larger capacity roaster and a clear commitment to integrate everything in a single space. <\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Pamplona today: more cafeterias, but a unique model<\/strong><\/h3>\n\n<p>When they opened, there were very few specialty coffee shops. Today Joaqu\u00edn estimates <strong>there are more than 10<\/strong> in the city. Afortunato stands out because it is <strong>the only one<\/strong> (according to his experience) that combines <strong>roastery + coffee shop<\/strong> in the same place, which allows tastings with customers and immediate <strong>feedback<\/strong> in the cup.  <\/p>\n\n<h3 class=\"wp-block-heading\"><strong>A charter designed for Profiles (and to educate)<\/strong><\/h3>\n\n<p>They work with about <strong>10 coffees<\/strong> and four simple profiles to guide the customer: <strong>Floral, Citrus, Fruity and Chocolaty<\/strong>. They seek a balance between <strong>innovation<\/strong> (Processes\/fermentations) and <strong>sustainability<\/strong> (preference for Organic coffees when possible), without falling into elitism. <\/p>\n\n<h3 class=\"wp-block-heading\"><strong>&#8220;Connecting people&#8221;: let the mug tell a story<\/strong><\/h3>\n\n<p>Afortunato&#8217;s vision for the future is that the consumer, in addition to enjoying the <strong>coffee, should keep in mind the people behind the coffee<\/strong>: Producer, Cultivation, social\/environmental project and more conscious purchasing decisions.<\/p>\n\n<h3 class=\"wp-block-heading\"><\/h3>\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>In this episode of En la Barra we visit Afortunato in Pamplona and chat with Joaqu\u00edn about its beginnings, the growth of specialty coffee in the city and its unique model: roastery and coffee shop on the same premises.
