During this process, high temperatures are reached, which is why <strong>the sugar caramelizes<\/strong>, enveloping the coffee bean, creating a very dark and shiny film, obtaining the characteristic <strong>black color<\/strong> of <strong>roasted coffee<\/strong>.<\/p>\n<p>Thus, <strong>a dark beverage with a very bitter taste<\/strong> is obtained, with the false belief that this is a more intense and consistent coffee, being the <strong>effect of the burnt sugar<\/strong> the one that <strong>masks the true aromas and flavors of the coffee<\/strong>.<\/p>\n<p>Torrefacto coffees are usually elaborated with the <strong> robusta variety<\/strong>, of<strong> poorer quality<\/strong> and <strong>not very digestive<\/strong>, which results in a <strong>dense coffee<\/strong> with a <strong>bitter<\/strong> finish, and with <strong>twice as much caffeine<\/strong> as arabica coffee, which is more aromatic, smooth on the palate and digestive.<\/p>\n<p>Numerous <strong>studies relate the consumption of roasted coffee with health-related problems<\/strong>, since the high concentration of sugar, and the &#8220;burning&#8221; is not free for our health, and is not recommended not only for diabetics (due to the high amounts of sugar in the roasting Process and also due to the fact that even more sugar is added to the cup to mask the bitter and strong Flavour). Therefore, due to its dubious health benefits, <strong> research continues to<\/strong> check for <strong>possible carcinogenic properties<\/strong>.<\/p>\n<h3><b>Betting on natural roast coffee<\/b><\/h3>\n<p><strong>Natural coffee<\/strong>, not being adulterated with any additives,<strong>has all its sensory and organoleptic qualities intact<\/strong>. This is why it is a <strong>much healthier coffee<\/strong>, with a greater number of benefits and nutritional properties.<\/p>\n<p>There is a wide<strong>variety of flavors and sensations<\/strong> within a <strong>good cup of coffee,<\/strong> but we should <strong>bet on<\/strong> quality Arabica coffee with<strong> 100% natural roasting<\/strong>, which means that the beans have been roasted <strong>alone by means of heat<\/strong>.<\/p>\n<p><strong>Coffees<\/strong> hide a great <strong>variety of nuances<\/strong>, both in aroma and flavor. But what <strong>we should not<\/strong> find in a good coffee are <strong>bitter flavors<\/strong>, but rather sweet or floral, and even citric.
