Es durante esta pr\u00e1ctica que el catador por medio de la degustaci\u00f3n y el olfato determina y valora cada una de las caracter\u00edsticas que definen un caf\u00e9.<\/p><p>El catador es capaz de identificar caracter\u00edsticas y descriptores \u00fanicos en el caf\u00e9, pero a veces estas sensaciones olfativas son complejas y dif\u00edciles de catalogar, por ello el objetivo de la rueda de descriptores es servir de ayuda, un complemento y herramienta que respalde la memoria sensorial en la descripci\u00f3n de un Comenzando por los tres grupos b\u00e1sicos de sensaciones olfativas y gustativas: enzim\u00e1tico, caramelizaci\u00f3n y destilaci\u00f3n seca, se han recopilado los 145 descriptores m\u00e1s habituales que se suelen encontrar en un caf\u00e9:\u00a0<\/p><p><strong>Enzim\u00e1tico:<\/strong> aquellos compuestos que son resultados principalmente de las reacciones enzim\u00e1ticas que ha sufrido el grano mientras que todav\u00eda era un organismo vivo, como por ejemplo aromas herbales, florales o afrutados. Se puede destacar en este grupo los aromas m\u00e1s perfumados.<\/p><p><strong>Caramelizaci\u00f3n:<\/strong> son el resultado de la caramelizaci\u00f3n de los az\u00facares que ocurren durante el proceso de tostado, aqu\u00ed se encuentran chocolates, caramelos y az\u00facares.<\/p><p><strong>Destilaci\u00f3n seca:<\/strong> Resultan de aquellos procesos de tuestes m\u00e1s elevados, aunque tambi\u00e9n son caracter\u00edsticos de determinados or\u00edgenes.<br \/>Si se avanza del primer c\u00edrculo, correspondiente al centro de la rueda, al c\u00edrculo posterior a trav\u00e9s de cada uno de los 3 grupos m\u00e1s generales, se aumenta la precisi\u00f3n de las sensaciones, diferenciando hasta 9 subgrupos.<\/p><p>El grupo enzim\u00e1tico se divide en afrutados, fragancias, alcoholes, fermentados y vegetales; por su parte el grupo de destilaci\u00f3n seca lo hace en especias, y el grupo de caramelizaci\u00f3n se subdivide en dulces, frutos secos y
