Cuando abrimos un paquete de caf\u00e9 y nos sorprende un aroma envolvente, es que vamos bien. En cambio, cuando abrimos un paquete y lo notamos rancio, la cosa cambia. Probablemente, el ox\u00edgeno ha entrado en contacto con los aceites del caf\u00e9 y los ha alterado.<\/p>\n<p>La manera de transportar los granos de caf\u00e9 ya procesados es importante para no da\u00f1ar el producto y conservar todas sus propiedades. <strong>Para el transporte del caf\u00e9, tradicionalmente se han utilizado sacos de dos tipos de materiales: el yute y el sisal.<\/strong> En ambos casos estamos hablando de <strong>fibras extra\u00eddas de materiales naturales.<\/strong> Actualmente, y dependiendo del pa\u00eds e incluso de cada exportador, se utilizan otros tipos de materiales que permiten una mejor conservaci\u00f3n durante el viaje desde el origen hasta el pa\u00eds de destino. <strong>As\u00ed, por ejemplo, materiales como el prolipropileno, GrainPro o Videplast permiten construir una atm\u00f3sfera modificada para que el caf\u00e9 conserve la humedad.<\/strong> Los sacos se colocan en contenedores que normalmente est\u00e1n hechos de metal. Aunque los contenedores suelen ser refrigerados, el caf\u00e9 almacenado all\u00ed dentro a altas temperaturas y poca ventilaci\u00f3n puede sudar, es decir, evaporar parte de su humedad. <strong>Por eso es importante que el caf\u00e9 en grano oro est\u00e9 bien seco para mantener su calidad durante el tiempo que dure el transporte en estas condiciones.<\/strong><\/p>\n<h3>Conservaci\u00f3n del caf\u00e9<\/h3>\n<p><strong>Para una correcta conservaci\u00f3n del caf\u00e9<\/strong>, es necesario que se mantenga en un ambiente fresco, de<strong> unos 15 \u00b0C de temperatura,<\/strong>aproximadamente. El proceso de oxidaci\u00f3n va a depender del estado en el que se encuentre el caf\u00e9, es decir, <strong>cuanto m\u00e1s transformado est\u00e9 el caf\u00e9, m\u00e1s r\u00e1pido ser\u00e1 su proceso de oxidaci\u00f3n.<\/strong> Para <strong>el caf\u00e9 verde,<\/strong> e<strong>l tiempo de conservaci\u00f3n \u00f3ptimo suele ser de un a\u00f1o,<\/strong> siempre que se mantenga en condiciones id\u00f3neas de temperatura y almacenaje. En cambio, para el caf\u00e9 tostado en grano, el tiempo de conservaci\u00f3n \u00f3ptimo ser\u00e1 de un mes como m\u00e1ximo. Si el caf\u00e9 ya ha sido molido, el proceso de oxidaci\u00f3n es tan r\u00e1pido que incluso envasado y conservaci\u00f3n p<strong>odr\u00edamos decir que su punto \u00f3ptimo se reduce tras los primeros 15 minutos.<\/strong> El caf\u00e9 tostado deber\u00eda conservarse en un envase que <strong>posea una v\u00e1lvula unidireccional, es decir, que permita salir el di\u00f3xido de carbono producido y que no deje entrar ox\u00edgeno del exterior.<\/strong> Respecto a la bebida en s\u00ed, p<strong>ara que mantenga intactas todas sus cualidades sensoriales y organol\u00e9pticas, deber\u00eda ser consumida inmediatamente despu\u00e9s de preparada.<\/strong> En el momento en que la bebida est\u00e1 preparada ya empiezan a perderse los aromas vol\u00e1tiles. Por ello, una tradici\u00f3n tan arraigada como preparar una cafetera italiana para un par de d\u00edas no ser\u00eda lo m\u00e1s adecuado, sino que incluso se desaconsejar\u00eda.<a href=\"https:\/\/es.linkedin.com\/company\/mareterracoffee\" target=\"_blank\" rel=\"noopener\"><br \/>\n<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>La importancia del envasado y la conservaci\u00f3n del caf\u00e9 para mantenerlo sus propiedades.
