Decidi\u00f3 formarse, viajar y rodearse de referentes para aprender todo lo posible. Su objetivo: acercar el caf\u00e9 de calidad al p\u00fablico madrile\u00f1o y crear una cultura en torno a \u00e9l. Desde entonces, el movimiento no ha parado de crecer, con un auge en 2023 y una expansi\u00f3n hacia hoteles, restaurantes y cafeter\u00edas en 2024. Agust\u00edn compara este crecimiento con lo vivido en Londres hace una d\u00e9cada, aunque reconoce que Madrid a\u00fan est\u00e1 en camino de alcanzar ese nivel.<\/p>\n\n\n\n<p>Agust\u00edn nos explic\u00f3 c\u00f3mo el consumidor madrile\u00f1o est\u00e1 aprendiendo a distinguir el <strong>caf\u00e9 de especialidad real<\/strong> de lo que solo lleva la etiqueta. Antes, muchos locales se autodenominaban \u201ccaf\u00e9s de especialidad\u201d sin ofrecer el producto aut\u00e9ntico. Ahora, el p\u00fablico est\u00e1 m\u00e1s exigente y dispuesto a pagar por calidad.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>El futuro del caf\u00e9 de especialidad<\/strong><\/h3>\n\n\n\n<p>Conf\u00eda en que en los pr\u00f3ximos 5-10 a\u00f1os el sector seguir\u00e1 creciendo, alcanzando tambi\u00e9n al canal <strong>HORECA<\/strong> y a tiendas de alimentaci\u00f3n. Para Agust\u00edn, el futuro pasa por encontrar el equilibrio entre el caf\u00e9 comercial y el de especialidad.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>\u00bfDirect Trade o importadores?<\/strong><\/h3>\n\n\n\n<p>Aunque el <strong>Direct Trade<\/strong> suena ideal, Agust\u00edn valora el papel de los importadores por su transparencia y trazabilidad. La clave est\u00e1 en mantener una comunicaci\u00f3n abierta con los productores, incluso a trav\u00e9s de intermediarios.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Desaf\u00edos del sector: precios y normativas<\/strong><\/h3>\n\n\n\n<p>Tambi\u00e9n hablamos sobre los <strong>desaf\u00edos actuales del sector<\/strong>, como el aumento de precios del caf\u00e9 y las nuevas regulaciones europeas sobre deforestaci\u00f3n. Agust\u00edn destaca que los consumidores deben entender que pagar m\u00e1s por una taza de caf\u00e9 de calidad es una inversi\u00f3n en <strong>sostenibilidad y \u00e9tica<\/strong>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>El perfil del consumidor espa\u00f1ol<\/strong><\/h3>\n\n\n\n<p>Por \u00faltimo, discutimos el <strong>perfil del consumidor espa\u00f1ol<\/strong>, tradicionalmente inclinado hacia sabores achocolatados y frutos secos.
