Su historia es un claro ejemplo de c\u00f3mo la pasi\u00f3n, el conocimiento y la visi\u00f3n pueden transformar una industria tradicional.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\">\n    <div class=\"wp-block-embed__wrapper\">\n        <iframe width=\"100%\" height=\"515\" src=\"https:\/\/www.youtube.com\/embed\/508noHrTMTA\" frameborder=\"0\" allowfullscreen><\/iframe>\n    <\/div>\n<\/figure>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Del mundo de la electr\u00f3nica a la barra de caf\u00e9<\/strong><\/h3>\n\n\n\n<p>Alejandro no lleg\u00f3 al caf\u00e9 por casualidad, aunque s\u00ed desde un camino poco convencional. Tras casi dos d\u00e9cadas trabajando en otra empresa, donde se form\u00f3 en control de calidad, decidi\u00f3 dar un giro profesional y apostar por un sue\u00f1o propio: acercar el caf\u00e9 de especialidad a su ciudad. \u201cEn Bilbao, el caf\u00e9 era torrefacto en su mayor\u00eda. Ahora, cada vez m\u00e1s personas buscan algo diferente\u201d, nos cuenta.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Bilbao empieza a saborear el caf\u00e9 de especialidad<\/strong><\/h3>\n\n\n\n<p>En los \u00faltimos a\u00f1os, y especialmente en el \u00faltimo a\u00f1o y medio, el cambio ha sido palpable. Aunque el camino no ha sido f\u00e1cil, cada vez hay m\u00e1s locales que apuestan por caf\u00e9s de origen, de calidad y con historia. \u201cLa gente empieza a preguntar, a diferenciar sabores. Y eso es clave para que este movimiento se mantenga\u201d, dice Alejandro.<\/p>\n\n\n\n<p>El futuro pinta prometedor: \u201cEn cinco a\u00f1os, el consumidor vasco sabr\u00e1 distinguir un caf\u00e9 bien tostado, de buen origen, y tomar\u00e1 decisiones conscientes\u201d.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Educaci\u00f3n, origen y perfil: las claves de Nokora<\/strong><\/h3>\n\n\n\n<p>En <strong>Nokora Specialty Coffee<\/strong>, no se trata solo de servir caf\u00e9. Se trata de crear un v\u00ednculo entre el producto, el productor y el consumidor. \u201cQueremos entender qu\u00e9 le gusta al cliente, y a partir de ah\u00ed, proponerle algo que se adapte a su paladar: chocolates, caramelo, florales, frutales\u2026\u201d.<\/p>\n\n\n\n<p>La rotaci\u00f3n de or\u00edgenes y procesos es parte del ADN del proyecto, ayudando a los clientes a entender la <strong>estacionalidad<\/strong> y la <strong>diversidad sensorial<\/strong> del caf\u00e9 de especialidad. Los perfiles de espresso y filtro se trabajan por separado, siempre buscando equilibrio, claridad y autenticidad.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Una cadena transparente, una relaci\u00f3n con prop\u00f3sito<\/strong><\/h3>\n\n\n\n<p>Alejandro destaca la figura del <strong>importador<\/strong> como un eslab\u00f3n esencial para mantener la <strong>trazabilidad<\/strong> y <strong>la relaci\u00f3n con origen<\/strong>, valorando su compromiso con los productores, la transparencia y la construcci\u00f3n de relaciones duraderas.<\/p>\n\n\n\n<p>\u201cLa certificaci\u00f3n es importante, pero en Nokora preferimos valorar otros par\u00e1metros: la conexi\u00f3n con el productor, la forma en que trabaja, c\u00f3mo trata a su comunidad. Eso, al final, tiene mucho m\u00e1s impacto\u201d, afirma.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Inspiraci\u00f3n y comunidad<\/strong><\/h3>\n\n\n\n<p>Alejandro no camina solo.
