Se trata del <b>quinto pa\u00eds en el r\u00e1nking actual de producci\u00f3n mundial de caf\u00e9<\/b> y es el m\u00e1s importante de todo el continente africano. Aproximadamente<b> el 85% de los agricultores en este pa\u00eds son muy peque\u00f1os que poseen plantaciones que no exceden las 0,1 hect\u00e1reas<\/b>.<\/p>\n<p>En el pa\u00eds encontramos 12 zonas de producci\u00f3n muy diferentes, m\u00e1s de 130 micro-ubicaciones, as\u00ed como m\u00e1s de 2,000 variedades aut\u00f3ctonas que hacen que <b>el caf\u00e9 et\u00edope sea muy diverso y complejo.\u00a0<\/b><\/p>\n<p>La regi\u00f3n de Sidamo descansa <b>en el valle del Rift al sur del pa\u00eds<\/b> y en una <b>zona de frondosa vegetaci\u00f3n<\/b> debido a que en la <b>\u00e9poca de lluvias las precipitaciones son abundantes<\/b>. <b>La altura sobre el nivel del mar<\/b> en esta demarcaci\u00f3n se encuentra entre los 1500 y los 2300 metros. <b>\u00a0<\/b><\/p>\n<h3><b>Shantawene Farm and Washing Stations<\/b><\/h3>\n<p>En<b> noviembre de 2019<\/b>, viajamos a Daye, una peque\u00f1a ciudad en el distrito de Bensa, en la regi\u00f3n de Sidamo, para <b>lanzar una nueva ronda de experimentos cuidadosamente planificados por nuestro departamento de I + D. <\/b>Nuestros socios locales:<a href=\"https:\/\/www.dayebensacoffee.com\/\"><b> Daye Bensa Coffee<\/b><\/a>, una empresa que cultiva, procesa y exporta caf\u00e9, con un equipo joven de gerentes de estaciones de producci\u00f3n y lavado en el campo.<\/p>\n<p>La red de Daye consta de <b>16 estaciones de lavado<\/b> alrededor de Sidamo donde trabajan con productores externos y una finca, llamada Shantawene. Si bien nos basamos estrat\u00e9gicamente en Daye durante una semana, nuestro trabajo conjunto se llev\u00f3 a cabo en 3 pueblos diferentes: Shantawene, Karamo y Bombe, todos ubicados entre 1900-2300 m de altitud<\/p>\n<p>Durante nuestra visita realizamos un<b> cambio de t\u00e9cnicas de producci\u00f3n introduciendo fermentaciones anaer\u00f3bicas, combinadas y varias t\u00e9cnicas de secado <\/b>que unidas<b> a una gen\u00e9tica \u00fanica y al ecosistema particular <\/b>de esta regi\u00f3n nos reporta unos<b> excelentes resultados.<\/b><\/p>\n<h3><b>El resultado<\/b><\/h3>\n<p>Durante tres a\u00f1os seguidos Daye Bensa forma parte del\u00a0 TOP 10 del Cup of Excellence en Ethiopia. En este mes de julio de 2022 han conseguido un resultado excepcional &#8211; Segundo puesto entre los mejores caf\u00e9s de Etiop\u00eda\u00a0 2022 con una puntuaci\u00f3n de 90,25 SCA. Nos enorgullece que se haya conseguido una punutuaci\u00f3n tan alta gracias\u00a0 la fermentaci\u00f3n anaer\u00f3bica, solo dos lotes de este proceso llegaron hasta ronda internacional y una de ellos de <a href=\"https:\/\/www.dayebensacoffee.com\/\">Daye Bensa<\/a> \u00a1Felicidades!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>En 2019 realizamos en Etiop\u00eda un cambio de t\u00e9cnicas de producci\u00f3n con fermentaciones anaer\u00f3bicas, combinadas y varias t\u00e9cnicas de secado.
