Les prot\u00e9ines, les mati\u00e8res grasses et le lactose sont les principaux ingr\u00e9dients du lait qui permettent une \u00e9mulsion parfaite. Les deux sites <strong>lait <\/strong><strong>Le lait demi-\u00e9cr\u00e9m\u00e9 et le lait \u00e9cr\u00e9m\u00e9 sont plus difficiles \u00e0 \u00e9mulsionner que le lait entier<\/strong> et ne sont donc pas recommand\u00e9s. Le lait \u00e9cr\u00e9m\u00e9 contient moins de mati\u00e8res grasses, donne \u00e0 la cr\u00e8me un aspect plus dur et plus sec, et est beaucoup plus difficile \u00e0 dessiner.<\/p>\n<p>Il y a plusieurs facteurs \u00e0 prendre en compte lorsque l&rsquo;on utilise du lait dans nos recettes de caf\u00e9.<strong> Le plus important est de s&rsquo;assurer que le lait est en bon \u00e9tat.<\/strong> Si elle est ouverte depuis plusieurs jours, il est important de v\u00e9rifier qu&rsquo;elle n&rsquo;est pas p\u00e9rim\u00e9e ou coup\u00e9e, car il s&rsquo;agit d&rsquo;un produit hautement p\u00e9rissable qui <strong>doit \u00eatre conserv\u00e9 au froid, \u00e0 4 \u00b0C.<\/strong><\/p>\n<p><strong>Le lait ne doit pas \u00eatre chauff\u00e9 \u00e0 une temp\u00e9rature sup\u00e9rieure \u00e0 70 \u00b0C.<\/strong> En outre, il faut v\u00e9rifier que la buse de la machine est propre et exempte de r\u00e9sidus de lait des \u00e9mulsions pr\u00e9c\u00e9dentes.<\/p>\n<p>Pour \u00e9mulsionner le lait, suivez les <strong>\u00e9tapes ci-dessous<\/strong>:<\/p>\n<ul>\n<li>Remplissez la cruche \u00e0 lait juste en dessous du <strong>milieu de la cruche<\/strong>.<\/li>\n<li>Ins\u00e9rez<strong> l&#8217;embout du mousseur juste sous la surface<\/strong> du lait.<\/li>\n<li><strong> Inclinez le pichet pour<\/strong> cr\u00e9er une bonne circulation et d\u00e9clencher la vapeur.<\/li>\n<li><strong> Nous abaissons la cruche de fa\u00e7on millim\u00e9trique<\/strong> pour continuer \u00e0 introduire de l&rsquo;air en petites quantit\u00e9s.<\/li>\n<li>Lorsque le<strong> lait atteint une temp\u00e9rature de 40 \u00b0C,<\/strong> nous soulevons la cruche pour approfondir la cuisson \u00e0 la vapeur jusqu&rsquo;\u00e0 1-5 cm sous la surface afin de capter plus d&rsquo;air.<\/li>\n<li><strong> Maintenez cette position jusqu&rsquo;\u00e0 ce que la temp\u00e9rature atteigne 55-60 \u00b0C<\/strong>. C&rsquo;est ainsi que nous brisons les bulles de taille moyenne et que nous chauffons le lait \u00e0 la temp\u00e9rature parfaite. Par inertie, le lait gagnera 5 \u00b0C de plus.<\/li>\n<\/ul>\n<p>En g\u00e9n\u00e9ral, les <strong>r\u00e8gles de base pour pr\u00e9parer nos recettes avec du lait sont de toujours utiliser du lait froid<\/strong> et de ne pas le chauffer plus d&rsquo;une fois. Il ne faut jamais trop remplir la cruche pour ne pas d\u00e9border au moment de commencer l&rsquo;\u00e9mulsion, et il n&rsquo;est pas non plus conseill\u00e9 de faire bouillir le lait, ce qui non seulement g\u00e2cherait la cr\u00e8me et le lactose, mais enl\u00e8verait aussi la douceur.
