Pour comprendre pourquoi un caf\u00e9 peut \u00eatre si diff\u00e9rent d\u2019un autre (ar\u00f4mes, saveurs, texture en bouche), il est utile de partir de l\u2019origine : o\u00f9 pousse le caf\u00e9ier, combien de temps il met \u00e0 produire et quelles parties composent la cerise de caf\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">O\u00f9 le caf\u00e9 est cultiv\u00e9 : la <a href=\"https:\/\/mareterracoffee.com\/fr\/origines\/\">\u00ab ceinture du caf\u00e9 \u00bb<\/a> et l\u2019altitude<\/h2>\n\n\n\n<p>Le caf\u00e9 pousse principalement entre les tropiques du Cancer et du Capricorne, une zone connue sous le nom de <strong>ceinture du caf\u00e9<\/strong>. \u00c0 ces latitudes, les temp\u00e9ratures sont relativement stables et le r\u00e9gime des pluies favorise le d\u00e9veloppement du fruit.<\/p>\n\n\n\n<p>L\u2019<strong>altitude<\/strong> est un autre facteur cl\u00e9. De mani\u00e8re g\u00e9n\u00e9rale, de nombreuses fermes se situent entre <strong>200 et 2 000 m\u00e8tres<\/strong>, m\u00eame si cela d\u00e9pend du pays, de la vari\u00e9t\u00e9 et du microclimat. En altitude, les nuits sont souvent plus fra\u00eeches et la maturation plus lente, ce qui peut se traduire par des <strong>profils plus complexes<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Le temps du caf\u00e9ier : patience avant la productivit\u00e9<\/h2>\n\n\n\n<p>Une graine met du temps \u00e0 devenir une plante capable de produire des fruits. En g\u00e9n\u00e9ral, il faut <strong>3 \u00e0 5 ans<\/strong> pour que le caf\u00e9ier entre dans une phase r\u00e9ellement productive (m\u00eame s\u2019il peut donner quelques cerises auparavant).<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Premi\u00e8res ann\u00e9es :<\/strong> croissance et formation de la plante.<\/li>\n\n\n\n<li><strong>\u00c0 partir d\u2019environ 3 ans :<\/strong> la production devient plus r\u00e9guli\u00e8re.<\/li>\n\n\n\n<li><strong>Dur\u00e9e de vie moyenne :<\/strong> autour de <strong>15 ans<\/strong>, avec des variations selon les pratiques agronomiques, la vari\u00e9t\u00e9 et les conditions de culture.<\/li>\n<\/ul>\n\n\n\n<p>C\u00f4t\u00e9 rendement, un caf\u00e9ier peut produire environ <strong>jusqu\u2019\u00e0 900 g de caf\u00e9 vert par an<\/strong> (ordre de grandeur), ce qui aide \u00e0 comprendre pourquoi le caf\u00e9 de qualit\u00e9 demande tant de travail par kilo.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00c0 quoi ressemble la plante de caf\u00e9 : forme, feuilles et taille<\/h2>\n\n\n\n<p>Le caf\u00e9ier a souvent une <strong>forme conique<\/strong>, des branches souples et des <strong>feuilles \u00e9paisses, brillantes et persistantes<\/strong> pouvant atteindre environ <strong>20 cm<\/strong>. \u00c0 l\u2019\u00e9tat \u00ab naturel \u00bb, il peut mesurer <strong>8 \u00e0 12 m<\/strong>, mais en culture il est g\u00e9n\u00e9ralement taill\u00e9 \u00e0 <strong>2\u20133 m<\/strong> afin de :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>am\u00e9liorer la productivit\u00e9,<\/li>\n\n\n\n<li>faciliter la r\u00e9colte,<\/li>\n\n\n\n<li>et mieux g\u00e9rer la sant\u00e9 de l\u2019arbre.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Floraison et maturation : du jasmin \u00e0 la cerise<\/h2>\n\n\n\n<p>La floraison du caf\u00e9 est aussi br\u00e8ve que spectaculaire : elle dure \u00e0 peine <strong>trois jours<\/strong>. Les fleurs blanches tr\u00e8s parfum\u00e9es rappellent souvent le <strong>jasmin<\/strong>. Elle se produit g\u00e9n\u00e9ralement <strong>apr\u00e8s les pluies<\/strong>.<\/p>\n\n\n\n<p>Point important : si les pluies sont irr\u00e9guli\u00e8res, la floraison peut \u00eatre \u00e9tal\u00e9e dans le temps, et les cerises ne m\u00fbrissent pas toutes au m\u00eame rythme. Cela complique la r\u00e9colte et exige une s\u00e9lection plus pr\u00e9cise.<\/p>\n\n\n\n<p>Apr\u00e8s la floraison, la <strong>cerise de caf\u00e9<\/strong> met <strong>6 \u00e0 12 mois<\/strong> \u00e0 m\u00fbrir selon la vari\u00e9t\u00e9 et les conditions. Elle passe du vert \u00e0 des tons <strong>jaunes, orang\u00e9s ou rouges<\/strong> (avec de nombreuses nuances) lorsqu\u2019elle est pr\u00eate \u00e0 \u00eatre cueillie.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Anatomie d\u2019une cerise de caf\u00e9 : ce qui est torr\u00e9fi\u00e9 et ce qui est retir\u00e9<\/h2>\n\n\n\n<p>Une cerise de caf\u00e9 n\u2019est pas \u00ab seulement \u00bb une peau rouge : c\u2019est un fruit compos\u00e9 de plusieurs couches, et chacune peut influencer le r\u00e9sultat final, surtout pendant le <strong>traitement du caf\u00e9<\/strong>.<\/p>\n\n\n\n<p>De l\u2019ext\u00e9rieur vers l\u2019int\u00e9rieur :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Peau externe (\u00e9picarpe) :<\/strong> couche protectrice.<\/li>\n\n\n\n<li><strong>Pulpe (m\u00e9socarpe) :<\/strong> partie charnue.<\/li>\n\n\n\n<li><strong>Mucilage :<\/strong> couche g\u00e9latineuse, collante et riche en sucres (cl\u00e9 dans les proc\u00e9d\u00e9s lav\u00e9, honey ou nature).<\/li>\n\n\n\n<li><strong>Parche (endocarpe) :<\/strong> membrane dure qui entoure les graines ; on l\u2019appelle aussi \u00ab parche \u00bb.<\/li>\n\n\n\n<li><strong>Peau argent\u00e9e (t\u00e9gument) :<\/strong> fine pellicule adh\u00e9rant au grain.<\/li>\n\n\n\n<li><strong>Grain de caf\u00e9 (endosperme) :<\/strong> la graine \u2014 la partie qui est torr\u00e9fi\u00e9e puis consomm\u00e9e.<\/li>\n<\/ul>\n\n\n\n<p>En g\u00e9n\u00e9ral, une cerise contient <strong>deux grains<\/strong>.
