Il d\u00e9cide de se former, de voyager et de s&rsquo;entourer de personnes de r\u00e9f\u00e9rence afin d&rsquo;apprendre le plus possible. Son objectif : faire d\u00e9couvrir le caf\u00e9 de qualit\u00e9 au public madril\u00e8ne et cr\u00e9er une culture autour de ce produit. Depuis, le mouvement n&rsquo;a cess\u00e9 de cro\u00eetre, avec un boom en 2023 et une extension aux h\u00f4tels, restaurants et caf\u00e9s en 2024. Agust\u00edn compare cette croissance \u00e0 celle qu&rsquo;a connue Londres il y a dix ans, m\u00eame s&rsquo;il reconna\u00eet que Madrid est encore en passe d&rsquo;atteindre ce niveau.    <\/p>\n\n<p>Agust\u00edn a expliqu\u00e9 comment le consommateur madril\u00e8ne apprend \u00e0 distinguer les <strong>v\u00e9ritables<\/strong> caf\u00e9s <strong>de sp\u00e9cialit\u00e9 de<\/strong> ceux qui ne figurent que sur l&rsquo;\u00e9tiquette. Auparavant, de nombreux caf\u00e9s s&rsquo;intitulaient \u00ab\u00a0caf\u00e9s sp\u00e9ciaux\u00a0\u00bb sans offrir la v\u00e9ritable qualit\u00e9. Aujourd&rsquo;hui, le public est plus exigeant et pr\u00eat \u00e0 payer pour la qualit\u00e9.  <\/p>\n\n<h3 class=\"wp-block-heading\"><strong>L&rsquo;avenir des caf\u00e9s de sp\u00e9cialit\u00e9<\/strong><\/h3>\n\n<p>Il est convaincu qu&rsquo;au cours des 5 \u00e0 10 prochaines ann\u00e9es, le secteur continuera \u00e0 se d\u00e9velopper, atteignant \u00e9galement le canal <strong>HORECA<\/strong> et les boutiques d&rsquo;alimentation. Pour Agust\u00edn, l&rsquo;avenir r\u00e9side dans la recherche d&rsquo;un \u00e9quilibre entre le caf\u00e9 commercial et le caf\u00e9 de sp\u00e9cialit\u00e9. <\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Commerce direct ou importateurs ?<\/strong><\/h3>\n\n<p>Bien que le <strong>commerce direct<\/strong> semble id\u00e9al, Agust\u00edn appr\u00e9cie le r\u00f4le des importateurs pour leur transparence et leur tra\u00e7abilit\u00e9. L&rsquo;essentiel est de maintenir une communication ouverte avec les producteurs, m\u00eame par le biais d&rsquo;interm\u00e9diaires. <\/p>\n\n<h3 class=\"wp-block-heading\"><strong>D\u00e9fis pour le secteur : tarification et r\u00e9glementation<\/strong><\/h3>\n\n<p>Nous \u00e9voquons \u00e9galement les <strong>d\u00e9fis actuels du secteur<\/strong>, tels que la hausse des prix du caf\u00e9 et les nouvelles r\u00e9glementations europ\u00e9ennes sur la d\u00e9forestation. Agust\u00edn souligne que les consommateurs doivent comprendre que payer plus cher pour une tasse de caf\u00e9 de qualit\u00e9 est un investissement dans la <strong>durabilit\u00e9 et l&rsquo;\u00e9thique<\/strong>. <\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Le profil du consommateur espagnol<\/strong><\/h3>\n\n<p>Enfin, nous avons discut\u00e9 du <strong>profil du consommateur espagnol<\/strong>, traditionnellement enclin aux ar\u00f4mes de chocolat et de fruits secs.
