Entre les montagnes qui bordent le Honduras, Bethania allie histoire, proc\u00e9d\u00e9s modernes et vision claire : des caf\u00e9s doux, propres et coh\u00e9rents qui parlent de leur territoire. <\/p>\n\n<div style=\"height:29px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\">\n    <div class=\"wp-block-embed__wrapper\">\n        <iframe width=\"100%\" height=\"515\" src=\"https:\/\/www.youtube.com\/embed\/mVxM40oP4c4?si=NQ4rkgZlMUJvpyXH\" frameborder=\"0\" allowfullscreen=\"\"><\/iframe>\n    <\/div>\n<\/figure>\n\n<h3 class=\"wp-block-heading\"><strong>Ant\u00e9c\u00e9dents familiaux et relais<\/strong><\/h3>\n\n<p>Il y a dix ans, Martha et sa s\u0153ur Ana Mar\u00eda ont repris le projet que leur grand-p\u00e8re avait lanc\u00e9 et que leur p\u00e8re avait consolid\u00e9. Jusqu&rsquo;alors, la Ferme produisait du caf\u00e9 vendu localement, sans imaginer que le monde du caf\u00e9 de sp\u00e9cialit\u00e9 pouvait ouvrir autant de portes. \u00ab\u00a0C&rsquo;\u00e9tait un saut dans le vide, mais plein d&rsquo;illusions\u00a0\u00bb, se souvient-il. \u00ab\u00a0Gr\u00e2ce \u00e0 Mare Terra, nous avons appris \u00e0 voir le caf\u00e9 d&rsquo;une autre mani\u00e8re : \u00e0 soigner les processus, \u00e0 mesurer, \u00e0 go\u00fbter, \u00e0 comprendre ce que signifie vraiment la qualit\u00e9.   <\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Entre montagnes, tradition et nouvelles vari\u00e9t\u00e9s<\/strong><\/h3>\n\n<p>La Ferme Bethania est situ\u00e9e \u00e0 Suyatal, Dipilto, tout pr\u00e8s de la fronti\u00e8re avec le Honduras. C&rsquo;est une r\u00e9gion r\u00e9put\u00e9e pour produire certains des meilleurs caf\u00e9s du Nicaragua. Dans cet environnement privil\u00e9gi\u00e9, Martha cultive des vari\u00e9t\u00e9s qui repr\u00e9sentent \u00e0 la fois la tradition et l&rsquo;innovation : le Maracaturra, la reine incontest\u00e9e de la r\u00e9gion, et des vari\u00e9t\u00e9s plus r\u00e9centes comme le Java, le Geisha et le Sidra.  <\/p>\n\n<p>\u00ab\u00a0La Maracaturra nous appartient beaucoup\u00a0\u00bb, explique-t-il. \u00ab\u00a0Les vendangeurs l&rsquo;aiment parce qu&rsquo;elle a un bon rendement, et je suis fascin\u00e9 par sa douceur. Mais Java a un parfum de jasmin qui me fait tomber amoureux d&rsquo;elle\u00a0\u00bb. <\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Process alliant science et sensibilit\u00e9<\/strong><\/h3>\n\n<p>\u00c0 Bethania, les processus traditionnels coexistent avec des processus plus exp\u00e9rimentaux. Le moulin humide est situ\u00e9 dans la Ferme, tandis que le moulin sec se trouve \u00e0 Ocotal. L\u00e0, Martha et son \u00e9quipe travaillent avec du Lav\u00e9, des miels et des processus naturels, et ont incorpor\u00e9 des fermentations ana\u00e9robies et de longue dur\u00e9e.  <\/p>\n\n<p>El Recuerdo se souvient en riant des premi\u00e8res tentatives : \u00ab\u00a0J&rsquo;avais peur que les sacs de fermentation explosent, mais tout s&rsquo;est bien pass\u00e9. Aujourd&rsquo;hui, nous contr\u00f4lons les processus avec pr\u00e9cision et nous avons obtenu des caf\u00e9s beaucoup plus complexes.<\/p>\n\n<p>De tous, son pr\u00e9f\u00e9r\u00e9 est le Naturel Sleeping Bag, un Process naturel capsul\u00e9 qui, selon elle, \u00ab\u00a0maintient la propret\u00e9 et la douceur qui nous caract\u00e9risent\u00a0\u00bb. Dans une tasse, elle recherche toujours l&rsquo;\u00e9quilibre : une grande douceur, des notes de chocolat et une texture propre et soyeuse. <\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Communaut\u00e9 et biodiversit\u00e9<\/strong><\/h3>\n\n<p>Avant de nous quitter, Martha lance une invitation sinc\u00e8re aux torr\u00e9facteurs et aux baristas : \u00ab\u00a0Venez \u00e0 l&rsquo;origine. Ici, vous comprendrez d&rsquo;o\u00f9 vient chaque note, chaque douceur. Mon pays a un caf\u00e9 incroyable et des gens encore meilleurs\u00a0\u00bb. Alors que l&rsquo;apr\u00e8s-midi tombe sur les plantations de caf\u00e9, on sent que Betania n&rsquo;est pas seulement une Ferme : c&rsquo;est une histoire de racines, de pers\u00e9v\u00e9rance et d&rsquo;espoir, \u00e9crite dans chaque tasse.Au-del\u00e0 de la production, Martha se pr\u00e9occupe de cr\u00e9er un environnement durable pour son \u00e9quipe et l&rsquo;\u00e9cosyst\u00e8me qui l&rsquo;entoure. Ces derni\u00e8res ann\u00e9es, elle a plant\u00e9 des arbres fruitiers pour attirer les oiseaux et fournir de la nourriture aux travailleurs. \u00ab\u00a0Avant, on ne voyait pas de loriots par ici\u00a0\u00bb, dit-elle. \u00ab\u00a0Depuis qu&rsquo;il y a plus d&rsquo;arbres fruitiers, ils sont revenus. Alors que l&rsquo;apr\u00e8s-midi tombe sur les plantations de caf\u00e9, on sent que Betania n&rsquo;est pas seulement une Ferme : c&rsquo;est une histoire de racines, de pers\u00e9v\u00e9rance et d&rsquo;espoir, \u00e9crite dans chaque tasse.<\/p>\n\n<p><\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Regarder vers l&rsquo;avenir<\/strong><\/h3>\n\n<p>Lorsqu&rsquo;on lui demande comment il envisage l&rsquo;avenir de Bethania, sa r\u00e9ponse allie enthousiasme et r\u00e9alisme. \u00ab\u00a0Je r\u00eave de continuer \u00e0 grandir, d&rsquo;am\u00e9liorer les infrastructures, de construire de nouveaux dortoirs, une plus grande cuisine et de continuer \u00e0 exporter plus de caf\u00e9s de haute qualit\u00e9. <\/p>\n\n<p>Son objectif pour 2030 est clair : atteindre 1 000 quintaux export\u00e9s, conserver 70 % des lots entre 88 et 89 points et obtenir au moins deux lots de 90+. \u00ab\u00a0Et j&rsquo;esp\u00e8re que d&rsquo;ici l\u00e0, ce sera mon fils ou ma ni\u00e8ce qui prendra la rel\u00e8ve.
