Cette diversit\u00e9 explique \u00e9galement ses r\u00e9gions caf\u00e9i\u00e8res (telles que Atitl\u00e1n, Antigua, Cob\u00e1n, Huehuetenango, San Marcos, Fraijanes ou Nuevo Oriente), chacune ayant ses propres conditions et styles. <\/p>\n\n<p><strong>Pampojil\u00e1 : du champ \u00e0 la tasse<\/strong><br\/>\u00c0 la <strong>Ferme Pampojil\u00e1<\/strong>, nous avons discut\u00e9 avec Edgar Muralles (marketing) et Alex Teleguario (responsable agricole) de la mani\u00e8re dont une sp\u00e9cialit\u00e9 de caf\u00e9 se construit \u00e0 partir de la base. Pour eux, la diff\u00e9rence ne commence pas dans la cuve, mais sur le terrain : nutrition bas\u00e9e sur l&rsquo;analyse, culture saine, gestion de l&rsquo;ombre et de l&rsquo;eau, adaptation au climat et, surtout, r\u00e9colte s\u00e9lective : ne traiter que les cerises m\u00fbres. <\/p>\n\n<p>Pampojil\u00e1, c&rsquo;est aussi une histoire : une ancienne Ferme qui a connu des moments difficiles apr\u00e8s de grandes temp\u00eates et des glissements de terrain, et qui depuis 2012 s&rsquo;est fortement renouvel\u00e9e sous l&rsquo;impulsion d&rsquo;Agropecuaria Titl\u00e1n, en replantant et en modernisant l&rsquo;exploitation.<\/p>\n\n<p>Process avec m\u00e9thode : mesure de la r\u00e9p\u00e9tabilit\u00e9<\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Process avec m\u00e9thode : mesure de la r\u00e9p\u00e9tabilit\u00e9<\/strong><\/h3>\n\n<p>Dans les Process, le Lav\u00e9 reste la base, mais le projet s&rsquo;est d\u00e9velopp\u00e9 dans les Naturels, les miels et les Ana\u00e9robies. La cl\u00e9 du changement est de passer de l&rsquo;intuition \u00e0 la mesure et \u00e0 la r\u00e9p\u00e9tition : enregistrer le pH, le Brix, les temps et les temp\u00e9ratures pour pouvoir reproduire les profils et mieux comprendre l&rsquo;\u00e9volution de la fermentation. Selon eux, les an\u00e9robies impressionnent d&rsquo;abord par leur intensit\u00e9, mais avec le contr\u00f4le et l&rsquo;exp\u00e9rience, ils deviennent un v\u00e9ritable outil pour cr\u00e9er des caf\u00e9s diff\u00e9rents sans perdre en qualit\u00e9.  <\/p>\n\n<h3 class=\"wp-block-heading\"><strong>A l&rsquo;horizon 2030<\/strong><\/h3>\n\n<p>La vision est claire : consolider Pampojil\u00e1 en tant que Ferme leader \u00e0 Atitl\u00e1n et au Guatemala, en mettant l&rsquo;accent sur la durabilit\u00e9, les technologies utiles et une \u00e9quipe de personnes de plus en plus pr\u00eates \u00e0 innover.<\/p>\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Depuis Atitl\u00e1n, au Guatemala, nous nous sommes rendus \u00e0 la Ferme Pampojil\u00e1 pour discuter avec Edgar Muralles et Alex Teleguario du pass\u00e9 et du pr\u00e9sent du caf\u00e9 guat\u00e9malt\u00e8que.
