Une fois que le grain a absorb\u00e9 la chaleur, il passe \u00e0 une couleur jaune, puis \u00e0 une couleur brun clair et enfin \u00e0 une couleur brun fonc\u00e9.<\/p>\n<h3><b>\u00c9tapes de la torr\u00e9faction<\/b><\/h3>\n<p><strong>Pr\u00e9paration (chauffage et s\u00e9chage) :<\/strong> Au d\u00e9part, le grain de caf\u00e9 absorbe de l&rsquo;\u00e9nergie et, avec la perte d&rsquo;humidit\u00e9, il commence \u00e0 se transformer physiquement. L&rsquo;humidit\u00e9 passe g\u00e9n\u00e9ralement de 10% et 12% \u00e0 environ 5%. Enfin, la vapeur qui s&rsquo;accumule \u00e0 l&rsquo;int\u00e9rieur du grain d\u00e9clenche l&rsquo;apparition de changements chimiques.<\/p>\n<p><strong>Torr\u00e9faction (r\u00e9action de Maillard, transformations du sucre et de l&rsquo;acidit\u00e9) :<\/strong><\/p>\n<p>C&rsquo;est \u00e0 ce stade que le sucre passe de la caram\u00e9lisation \u00e0 la carbonisation, que les composants chimiques se d\u00e9placent et r\u00e9agissent dans le grain &#8211; les prot\u00e9ines interagissent avec les sucres et les acides amin\u00e9s pour g\u00e9n\u00e9rer une grande quantit\u00e9 de volatiles aromatiques.<br \/>\nGr\u00e2ce \u00e0 la caram\u00e9lisation et \u00e0 la r\u00e9action de Maillard, on commence \u00e0 remarquer le changement de couleur du jaune au brun.<\/p>\n<p><strong>D\u00e9veloppement :<\/strong> Lorsque l&rsquo;accumulation de CO2 et de vapeur \u00e0 l&rsquo;int\u00e9rieur du grain est affect\u00e9e par la pression, elle cr\u00e9e une petite explosion qui donne lieu au son \u00ab\u00a0crack\u00a0\u00bb. A partir de l\u00e0, le torr\u00e9facteur, en fonction des objectifs de la torr\u00e9faction, recherche le profil organoleptique, jouant sur la r\u00e9duction de l&rsquo;acidit\u00e9, l&rsquo;augmentation de l&rsquo;amertume et du corps du caf\u00e9.<\/p>\n<p><strong>Il est important de laisser le caf\u00e9 se reposer apr\u00e8s la torr\u00e9faction pendant au moins 24 heures pour lui permettre de se d\u00e9gazer.<\/strong><\/p>\n<h3>Comment savons-nous que notre r\u00f4ti n&rsquo;est pas le bon ?<\/h3>\n<p>C&rsquo;est au stade du d\u00e9veloppement du grain que le r\u00e9sultat final de notre caf\u00e9 est d\u00e9termin\u00e9. Il s&rsquo;agit d&rsquo;un processus o\u00f9 les changements se d\u00e9veloppent tr\u00e8s rapidement, et qui n\u00e9cessite donc un d\u00e9vouement et une attention particuliers.<br \/>\nNous pouvons savoir que notre r\u00f4ti n&rsquo;est pas le bon pour un certain nombre de raisons :<\/p>\n<p><strong>-R\u00e9duction de l&rsquo;acidit\u00e9<\/strong> &#8211; le caf\u00e9 perd de sa personnalit\u00e9<br \/>\n&#8211;<strong>Perte de corps<\/strong> &#8211; manque de densit\u00e9 de la boisson, sensation d\u00e9sagr\u00e9able au toucher.<br \/>\n-Le<strong>d\u00e9veloppement de l&rsquo;amertume<\/strong>(carbonique ou\/et v\u00e9g\u00e9tale)<br \/>\n&#8211;<strong>D\u00e9veloppement limit\u00e9du volume des grains<\/strong> &#8211; les grains compacts et durs sont plus difficiles \u00e0 moudre et \u00e0 infuser<br \/>\n-Moins de<strong>particules solubles<\/strong> &#8211; moins d&rsquo;intensit\u00e9 et qualit\u00e9 de boisson<br \/>\n-Une<strong>extraction<\/strong> plus difficile &#8211; un grain mal d\u00e9velopp\u00e9 physiquement et chimiquement cr\u00e9era plus de difficult\u00e9s au moment de l&rsquo;extraction.<\/p>\n<p>Ce sont l\u00e0 quelques indications sur la torr\u00e9faction du caf\u00e9 et sur la fa\u00e7on dont elle d\u00e9termine le r\u00e9sultat de notre tasse. <strong>Le torr\u00e9facteur doit contr\u00f4ler et prendre des donn\u00e9es sur les \u00e9l\u00e9ments critiques au cours des \u00e9tapes<\/strong> et surtout <strong>de la D\u00c9GUSTATION<\/strong> pour pouvoir d\u00e9terminer les r\u00e9sultats.<br \/>\n<em>Chez Mare Terra Coffee, nous pouvons vous conseiller sur la torr\u00e9faction la plus avantageuse pour votre produit.<\/em><a href=\"https:\/\/es.linkedin.com\/company\/mareterracoffee\" target=\"_blank\" rel=\"noopener\"><br \/>\n<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Un bref aper\u00e7u des principes de la torr\u00e9faction du caf\u00e9 de sp\u00e9cialit\u00e9.
