C&rsquo;est le <b>cinqui\u00e8me pays dans le classement actuel de la production mondiale de caf\u00e9<\/b> et est le plus important de tout le continent africain. Environ <b> 85% des agriculteurs de ce pays sont de tr\u00e8s petits exploitants dont les plantations ne d\u00e9passent pas 0,1 hectare.<\/b>.<\/p>\n<p>Le pays compte 12 zones de production tr\u00e8s diff\u00e9rentes, plus de 130 micro-localisations, ainsi que plus de 2 000 vari\u00e9t\u00e9s indig\u00e8nes qui rendent le caf\u00e9 \u00e9thiopien tr\u00e8s diversifi\u00e9 et complexe. <b>Le caf\u00e9 \u00e9thiopien est tr\u00e8s diversifi\u00e9 et complexe. <\/b><\/p>\n<p>La r\u00e9gion de Sidamo repose <b>dans la vall\u00e9e du Rift, au sud du pays.<\/b> et dans un <b>zone de v\u00e9g\u00e9tation luxuriante<\/b> car dans le <b>saison des pluies les pr\u00e9cipitations sont abondantes<\/b>. <b>Hauteur au-dessus du niveau de la mer<\/b> dans cette d\u00e9marcation se situe entre 1500 et 2300 m\u00e8tres. <b> <\/b><\/p>\n<h3><b>Ferme et stations de lavage de Shantawene<\/b><\/h3>\n<p>Sur<b> Novembre 2019<\/b>Dans la r\u00e9gion de Sidamo, nous nous sommes rendus \u00e0 Daye, une petite ville du district de Bensa, dans la r\u00e9gion de Sidamo, afin de <b>lancer une nouvelle s\u00e9rie d&rsquo;exp\u00e9riences soigneusement planifi\u00e9es par notre d\u00e9partement R&amp;D. <\/b>Nos partenaires locaux :<a href=\"https:\/\/www.dayebensacoffee.com\/\"><b> Caf\u00e9 Daye Bensa<\/b><\/a>une entreprise qui cultive, traite et exporte du caf\u00e9, avec une jeune \u00e9quipe de responsables de la production et des stations de lavage sur le terrain.<\/p>\n<p>Le r\u00e9seau de Daye est compos\u00e9 de <b>16 stations de lavage<\/b> autour de Sidamo o\u00f9 ils travaillent avec des producteurs externes et une ferme, appel\u00e9e Shantawene. Bien que nous nous soyons bas\u00e9s strat\u00e9giquement \u00e0 Daye pendant une semaine, notre travail ensemble s&rsquo;est d\u00e9roul\u00e9 dans 3 villages diff\u00e9rents : Shantawene, Karamo et Bombe, tous situ\u00e9s entre 1900 et 2300 m d&rsquo;altitude.<\/p>\n<p>Pendant notre visite, nous avons<b> modifi\u00e9 les techniques de production en introduisant la fermentation ana\u00e9robie, la fermentation combin\u00e9e et diverses techniques de s\u00e9chage <\/b>qui, associ\u00e9es \u00e0 la<b> g\u00e9n\u00e9tique unique et \u00e0 l&rsquo;\u00e9cosyst\u00e8me particulier <\/b>de cette r\u00e9gion, nous ont donn\u00e9 d&rsquo;<b> excellents r\u00e9sultats<\/b>.<\/p>\n<h3><b>Le r\u00e9sultat<\/b><\/h3>\n<p>Pendant trois ann\u00e9es cons\u00e9cutives, Daye Bensa a figur\u00e9 dans le TOP 10 de la Coupe d&rsquo;excellence en \u00c9thiopie. En ce mois de juillet 2022, ils ont obtenu un r\u00e9sultat exceptionnel : la deuxi\u00e8me place parmi les meilleurs caf\u00e9s d&rsquo;Ethiopie 2022 avec un score de 90,25 SCA. Nous sommes fiers qu&rsquo;un tel r\u00e9sultat ait \u00e9t\u00e9 obtenu gr\u00e2ce \u00e0 la fermentation ana\u00e9robie, car seuls deux lots issus de ce processus ont atteint le tour international, dont l&rsquo;un provenant de la r\u00e9gion de l&rsquo;Europe de l&rsquo;Est. <a href=\"https:\/\/es.linkedin.com\/company\/mareterracoffee\" target=\"_blank\" rel=\"noopener\"><br \/><\/a><\/p>\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>En 2019 en \u00c9thiopie, nous changeons les techniques de production avec des fermentations ana\u00e9robies, des fermentations combin\u00e9es et diverses techniques de s\u00e9chage.
