In this second chapter of “En la Barra”, we visit Martines Specialty Coffee in Sofia, Bulgaria, and talk to Alexander, a Peruvian roaster who is revolutionizing the specialty coffee scene in the country. From his inexperienced beginnings, to leading one of the most recognized roasters in the region, Alexander shares with us his history, vision of the market and reflections on the coffee value chain.
Martines, founded in 2005, started as a commercial coffee company, but since 2017 has taken a turn towards specializing in origin coffee, prioritizing cup quality, sensory education and the implementation of more controlled and sustainable processes.
During the interview, Alexander shared his vision of the Bulgarian market, which is in full growth in terms of specialty coffee consumption. We also talked about the importance of working with specialized importers that maintain direct and long-term relationships with Producers, which guarantees traceability, consistency in cup profiles, and access to lots with experimental Processes.
For Alexander, the roaster should focus on developing the potential of the bean, while the work of selection and purchase should be left in the hands of experts in the green coffee trade. The conversation also included topics such as the creation of blends, current logistical challenges and the value of a united coffee community.
